40th birthday ideas for mom!!!!?

Okay so my mom is turning 40 in May, I know it's a long time away but I really want it to be special and something she remembers. My mom is very outdoorsy but doesn't enjoy camping she likes running,biking, and hiking but I can't afford a new bike or good running shoes thanks for the helllllp!!!!!
