I have ticket trial for “Failure yield to pedestrian” Can I plead “not-guilty” since I didn't see the victim?

I hit a pedestrian before crosswalk in NJ. I didn’t see her when I want to turn right. I feel bad for her, I called police and the ambulance took her. The policeman told me that I can not contact the hospital to know her situation. I have a court trail for a ticket issued for “Failure to yield for pedestrian” should I plead “not-guilty” since I didn’t see her? What if the compensation that she asks will be more than my insurance limits?
